I would have my students blog as a means of written reflection. After each day or week, the students could blog about what they learned in class. It can later serve as a tool for review. I could also have my students blog while working on an ongoing project, especially in science. They can write about the discoveries they made, conclusions they've drawn, etc.

This would be a way to describe a trip and students who are interested could read and make comments. Could also recap the day's activities for students to read.
